I never thought I would like sugar cookies. They were always bland with a vague greasy mouth feel. And icing. Hate icing. It was like sweet constarchy shellac. But then I tried LilaLoa’s (http://www.lilaloa.com/2012/04/vanilla-variation.html) sugar cookies.
It was like opening up a whole new world in the baking universe. Cookie cutters had a practical purpose. And I needed a lot more supplies!
My new favorite sugar cookie recipe is based off of hers.
Strawberry sugar cookies
1/2 cup butter (room temperature is preferable but it can be straight out of the fridge)
3/4 cups sugar (vanilla sugar if you have it)
1/2 teaspoon vanilla extract or vanilla paste (love the paste)
3/8 teaspoon salt
3/8 teaspoon baking powder
1 3/4 cups flour
2 ounces of freeze dried strawberries (I buy them at Target or Trader Joe’s. about half of a package)
Place the freeze dried strawberries in a mini prep or food processor with the sugar. Process until the sugar looks like pink dust. In a separate bowl, cream butter and strawberry sugar together. Add egg and vanilla and mix well. Add baking powder and salt and mix. Add flour 1/2 cup at a time. If you think the dough looks dry after 1 1/2 cups of flour, you can leave the last 1/4 cup out.
Let the dough rest in the refrigerator for 30 mins to an hour. Roll out to your desired thickness (I like it about 1/4 inch) and bake in a 375 degree oven for 7 minutes.
I am loving these Hello Kitty vegetable cutters.
Cookie dough can get stuck on the bow but they leave a very clear impression.
These are chocolate sandwich cookies with raspberry white chocolate filling.
The lemon Hello Kitty cookies were cute too.
I’m not quite sure how I feel about these bento sandwich makers as cookie cutters. The plastic on the cutter is pretty dull the lines are not very clean. And the stamp grooves are not deep enough.
Maybe with less space between the bear stamp and the edge of the cookie it would look cuter?
I like the bunny face more.

Every year I send packages to friends containing a Valentine’s Day card from the dog and some baked goods. This year I included strawberry Hello Kitty sandwich cookies.
I love these bento vegetable cutters. I’ve yet to cut vegetables with them. But as bite size cookie cutter/ cookie stamp they work very well.
The freeze dried strawberries in the batter give it a nice soft pink hue.
